Vegan Tacos and Cinnamon Fruit Parfait

Being a new vegan is exciting and fun at times.  The other night I was making tacos for my family and I decided to see how I could make myself a vegan version of what they would be having.  It turned out so good I decided I needed to share it with all of you! 
So to get started you will need:1 Boca Burger (I used the "Original Vegan" kind)
Half an Onion finely chopped
Half Cup Sliced Mushrooms, Chopped
1 Avocado
Red Pepper Hummus
Half a Packet Taco Seasoning
Taco Shells

For the Cinnamon Fruit Parfait:
1 packet Stevia

First take the Boca Burger and put it in a small pot with just enough water to cover it.  Add your Half Packet of Taco Seasoning and cook on medium heat for a few minutes.  Keep an eye on this as the water will evaporate pretty quickly.  Use a spatula to press on the Boca Burger to see if it is soft yet.  If it is, press down on it and mix it up till it looks like ground beef (mince)  Then add your chopped onions and mushrooms and cook them together, stirring to make sure they don't stick to the bottom of the pot. Add a little water if you need to.  When the mushrooms and onions are cooked the way you like (I let mine get a bit mushy) cover the Pot and get your taco shells. When done, this Boca Burger mix will look just like ground beef.

Put Taco Shells in your oven at 200 Degrees Fahrenheit for about 10 minutes.  Next we get to stuff the Tacos with all the good stuff!  First put a layer of your Boca Burger Mix at the bottom.  Next put the Red Pepper Hummus on as your Second Layer.  Third put a layer of Avocado then add a drizzle of Salsa to finish it off!  The tacos are done! 

For the Cinnamon Parfait I cut a small Apple into thin slices and I used two Clementine Oranges for this recipe. Being small already I didn't feel I needed to cut the Clementines any smaller.  So I layered apple slices  and oranges till my crystal cup was full.  On each layer I sprinkled a tiny bit of Stevia and Cinnamon on the fruit.  When the cup was full I took what was left of the oranges and squeezed them over the top.  I did this because I thought the fruit looked a little dry from the Cinnamon.  It turned out to be fantastic!  I hope you enjoy it too!

The taco mix made 6 tacos.  The fruit parfait was made with the fruit I had on hand but could be made with all kinds of other fruit.    If you try this recipe please let me know if you like it or what you changed to make it even better!
